Protein Pancakes 🥞

You don't know it yet, but you NEED this recipe. A DELICIOUS and HEALTHIER version of pancakes with added protein, no dairy and no gluten. Not to mention it is low in fat and sugar. I have not been able to go back to regular pancakes ever since I tried making these babies and you will not want to either, trust me. Perfect to fit into your daily macros or to indulge in a morning treat without the need to feel guilty afterwards. Surely, you cannot pass this one up!




Makes 6


INGREDIENTS:


- 1/2 cup rolled oats

- 1 ripe bananas

- 2 eggs

- 1 scoop whey powder (I use vanilla)

- 1/2 tsp baking powder

- 1/4 cup soy or almond milk (if wanting non-dairy)

- 1/2 tsp cinnamon


METHOD:


1. Add oats to a blender and pulse until fine like powder.

2. Add baking powder, whey powder and cinammon and blend until combined.

3. Add in wet ingredients to blender and blend until all ingredients are thoroughly combined and mixture is smooth.

4. Heat butter in a frying pan and ensure heat is low whilst cooking pancakes. (I recommend using Nuttelex, which is a much healthier version of butter that tastes great and happens to be vegan).

5. Add pancake batter, one addition at a time and to your preferred size. Flip once bubbles begin to form on top, surface should be golden brown.

6. Once all pancakes are done, top with preferred ingredients such as berries, almond butter, cacao nibs, coconut flakes and maple syrup (sugar free recommended).
